Ooh, a toughie for me:

"Ride on Shooting Star" - FLCL might not have an opening theme, but does it sure have one dang fine ending theme. One of the best.
"Kokoroboisona" - The song is a classic. Anyone who has watched the iconic episode "After You've Gone" can't help but remember that scene while listening to it. The visuals in this one are also a lot of fun and a step up from "Uchuu," which was the deciding factor for me when choosing between the two.
"Uchuu wa Taihen da!" - But that said, this song perfectly captures the spirit of the series like no other. And considering how many great songs UY has in it's repertoire, that's saying something.
"Concentration" - Solid, but I can't say it resonates with me nearly as much as the others.

My Picks:

"Every Day" - Just a great UY ending with an excellent song and memorable theme and visuals. Made an awesome pair with "Rock the Planet" too.

"Fukai Mori" - Not my favorite of IY's endings, but the song is memorable and I really like the parts showing Sesshomaru visiting his father's grave and then the corpse of Ryukotsusei (the demon who killed him). It's a good reflection on how much his father meant to him and his motivations in the series.   

"Moon on the Water" - The song is well-dubbed (and superior to the original) and highly memorable, and though the visuals aren't much they capture the mood so well that it works anyway.

"I Wish" - I really liked the song, as well as it how it showed all the digidestined and their digimon in their various evolutions.

InuYasha - "Fukai Mori" - InuYasha has problems, but the EDs are rarely among them. This theme I remember vividly from a long time ago.
Urusei Yatsura - "Every Day" - Cute song and visuals.
BECK: Mongolian Chop Squad - "Moon on the Water [english dub]" - The song's nice, but it's not one of my favorite ending themes.
Digimon Adventure - "I Wish" - I like it, but Keep On is much better. This one doesn't stick out much to me.
